Ingredients

  • 4 slices bread toasted, any type you prefer
  • 1 - ripe avocado mashed
  • 4 - eggs poached
  • 1 tsp lemon juice optional, to flavor avocado
  • to taste - salt & pepper for seasoning
  • 1 pinch chili flakes optional, for a little heat
  • 1 tbsp fresh herbs optional, parsley or cilantro for garnish

Instructions

  1. Toast the bread:

    Lightly toast the bread slices until golden and crispy.

  2. Prepare the avocado:

    Mash the avocado in a bowl. Add lemon juice, salt, and pepper to taste.

  3. Poach the eggs:

    Bring a small saucepan of water to a gentle simmer. Crack each egg into the water and cook for 3–4 minutes until the whites are set but the yolks remain runny. Use a slotted spoon to remove eggs.

  4. Assemble the toast:

    Spread the mashed avocado evenly over each slice of toasted bread.

  5. Top with eggs:

    Place a poached egg on top of each avocado-covered toast.
