Ingredients

  • 3 Pieces Sausages Cumberland or Lincolnshire for a Rich and Bold peppery snap.

  • 150 Grams Chestnut Mushrooms Sliced and sautéed in butter for an earthy, Rich finish.
  • 200 Grams Baked Beans Simmer until the sauce is thick and Freshly Made in flavor.
  • 2 Slices Sourdough or White Bread For frying or toasting to soak up the Gourmet flavors.Salted Butter
  • 1 Tablespoon Salted Butter Essential for the mushrooms and buttering the toast.
  • 2 Tablespoons Neutral Oil High smoke point oil for frying the sausages and eggs.

Instructions

  1. Searing the Sausages:

    Heat 1 tbsp of oil in a large skillet over medium-low heat. Add the 2 pork sausages and cook for 12–15 minutes, turning frequently until Golden and cooked through.

  2. Crisping the Bacon:

    With 6 minutes remaining on the sausages, increase the heat to medium and add the 3 rashers of back bacon. Fry until the fat is crisp and the edges are slightly browned.

  3. The Garden Elements:

    Push the meats to one side of the pan. Place the halved tomato cut-side down and add the 150g of chestnut mushrooms with a knob of salted butter. Sauté for 5 minutes until the tomato is caramelized and mushrooms are Rich and tender.

  4. Thickening the Beans:

    While the meats finish, pour the 200g of baked beans into a small saucepan. Simmer over low heat, stirring occasionally, until the sauce reduces to a thick, Hearty consistency.

  5. The Eggs and Toast:

    Move the cooked meats and vegetables to a warm plate (or a 100°C oven). In the remaining pan fat, fry the 2 large eggs for 2–3 minutes until the whites are set but the yolks are Velvety Smooth. Simultaneously, toast or fry the 2 slices of bread until crisp.

  6. Assembly:

    Plate the components immediately. Season the eggs and tomatoes with a pinch of salt and pepper for that final Gourmet touch.
