Ingredients
  

  • 4 tortillas large, soft
  • 4 eggs beaten
  • 4 slices beef or 2 sausage links cooked and chopped
  • 1 cup shredded cheese cheddar or your choice
  • 1/2 cup bell peppers diced
  • 1/4 cup onion finely chopped
  • 1/2 cup tomatoes diced
  • 1 tbsp olive oil or butter for cooking eggs and vegetables
  • 1/2 tsp salt to taste
  • 1/4 tsp black pepper freshly ground
  • 1/4 cup avocado optional, sliced for filling

Method
 

  1. Prepare the ingredients: Chop the vegetables (bell peppers, onions, tomatoes) and cook the sausage until done. Slice if needed.
  2. Cook the vegetables:
    Heat olive oil or butter in a frying pan over medium heat. Sauté the bell peppers and onions for 2–3 minutes until slightly soft.
  3. Scramble the eggs:
    Pour the beaten eggs into the pan with vegetables. Stir gently and cook until eggs are fluffy and just set. Season with salt and pepper.
  4. Assemble the burrito:
    Warm the tortillas for a few seconds in a pan or microwave. Lay each tortilla flat, then layer scrambled eggs and vegetables, cooked bacon or sausage, shredded cheese, and avocado slices if using.
  5. Roll the burrito:
    Fold in the sides of the tortilla and roll tightly to form a wrap.
  6. Serve:
    Cut in half if desired and serve immediately for a warm, hearty breakfast. Optional: Serve with salsa, hot sauce, or a side of fresh fruit.
