- Prepare the ingredients: Chop the vegetables (bell peppers, onions, tomatoes) and cook the sausage until done. Slice if needed.
- Cook the vegetables: Heat olive oil or butter in a frying pan over medium heat. Sauté the bell peppers and onions for 2–3 minutes until slightly soft.
- Scramble the eggs: Pour the beaten eggs into the pan with vegetables. Stir gently and cook until eggs are fluffy and just set. Season with salt and pepper.
- Assemble the burrito: Warm the tortillas for a few seconds in a pan or microwave. Lay each tortilla flat, then layer scrambled eggs and vegetables, cooked bacon or sausage, shredded cheese, and avocado slices if using.
- Roll the burrito:Fold in the sides of the tortilla and roll tightly to form a wrap.
- Serve: Cut in half if desired and serve immediately for a warm, hearty breakfast. Optional: Serve with salsa, hot sauce, or a side of fresh fruit.
