  • 2 cups Tuna (canned, drained) Flaked; any preferred brand
  • 1 cup Sweetcorn Fresh, canned, or thawed frozen
  • 3 tbsp Mayonnaise Adjust for desired creaminess
  • 1 tsp Lemon juice Freshly squeezed for brightness
  • 1/4 tsp Black pepper Or to taste
  • 4 slices Bread White, whole wheat, or multigrain
  • Optional - Lettuce Adds crunch and freshness

Equipment

  • 1 Mixing Bowl To combine tuna, corn, and mayonnaise

Method
 

  1. Drain the canned tuna and place it in a mixing bowl.
  2. Add the sweetcorn to the bowl with the tuna.
  3. Add mayonnaise, lemon juice, and black pepper. Mix gently until well combined, keeping the tuna flaky.
  4. Take slices of bread and, if desired, lightly toast them for a warm sandwich.
  5. Spread the tuna and corn mixture evenly onto one slice of bread.
  6. Add optional toppings such as lettuce, cucumber slices, or cheese for extra flavor and crunch.
  7. Cover with another slice of bread to complete the sandwich.
  8. Slice the sandwich in half, if desired, and serve immediately.
  9. Store any leftover filling in the fridge for up to a day, but the sandwich is best enjoyed fresh.
