Loaded Jacket Potato with Cheese & Baked Beans

  • 4 large Russet potatoes Washed and scrubbed
  • 1 can Baked beans Tomato-flavored
  • 1 cup Cheddar cheese Grated
  • 2 tbsp Butter Optional, for extra richness
  • 1 tsp Salt To taste
  • 1 tsp Black pepper Optional, freshly cracked
  • 2 tbsp Sour cream Optional, for serving
  • 1 tbsp Spring onions Chopped, for garnish

Method
 

  1. Preheat your oven to 400°F (200°C). Wash and scrub the potatoes thoroughly, then pat them dry.
  2. Lightly prick each potato several times with a fork. Rub the skins with a little oil and sprinkle with salt for a crispy, flavorful exterior.
  3. Place the potatoes directly on a baking tray (or oven rack) and bake for 50–60 minutes, until the skin is crisp and a fork slides easily into the center.
  4. While the potatoes are baking, heat the baked beans in a small saucepan over low heat until warmed through.
  5. Remove the potatoes from the oven and let them rest for 5 minutes. Slice each potato open lengthwise and gently fluff the interior with a fork.
  6. Spoon a generous amount of baked beans into the center of each potato.
  7. Sprinkle grated cheddar cheese over the hot beans so it melts slightly. Add a small pat of butter if desired.
  8. Optional: Top with a dollop of sour cream and sprinkle chopped spring onions or freshly cracked black pepper for extra flavor and presentation.
  9. Serve immediately while hot, with extra beans or cheese on the side if desired.
